15 Minutes Vegan One Pot Quinoa Chili #vegan #shorts #recipes
Ingredients:
– 2 red onions
– 1 jar / 220g chickpeas
– 1 jar / 220g corn
– 1 jar / 250g kidney beans
– 150g quinoa
– 700g tomato passata
– 250ml veggie broth
Optional toppings:
– soy yogurt
– avocado
– lime
Instructions:
1️⃣ sauté onions in a bit of water or olive oil until browned.
2️⃣ add washed quinoa, drained corn, kidney beans, chickpeas as well as the tomato passata and veggie broth.
3️⃣ season with spices of choice. I like to use paprika powder, pepper, salt, chili powder and chili flakes.
4️⃣ close pot with a lid and let it simmer for about 10 minutes. Make sure the heat isn‘t turned too high otherwise it might burn.
5️⃣ remove lid and cook on medium/high for another 5 minutes until desired consistency (make sure to stir from time to time)
6️⃣ serve with some soy yogurt, avocado, chili flakes and lime wedges 💚
