Dalma Recipe in Odia I ଡାଲମା I Odia Authentic I roshniscuisine
So friends today we prepare Odisha famous Dalma…It is basically a dal mixed with all veggies.
Don’t confuse with Sambar…ithas its own unique flavour . It is super healthy dish well goes with rice, roti even if with puri. So lets get started…
And here I have added the extra masala that is jeera red chili powder to give it more flavourful…it just enhance the taste.

Preparation Time 15 min
Cooking Time 30 min
Serving Persons 4 to 6
Ingredients Required
1 medium potato cut into cubes
1 medium tomato cut into cubes
1 cup of tondli, turai, pumpkin, brinjal ,beans, carrot, raw papaya
2 green chili slitted
1 tsp ginger paste
¼ tsp turmeric powder
2 tsp oil
1 tbsp ghee
1 whole red chili
2 bay leaves
1 tsp mustard seeds
½ tsp cumin seeds
a pinch of asafoetida
2 tsp cumin red chili powder
½ cup tuar dal
¼ cup masoor dal
Salt to taste
1 tbsp chopped coriander leaves
Water to make the gravy

Procedure
Soak the dals for 30 to 40 min.
Then add water, liitle oil, salt n haldi and pressure cook it till the dal is properly cooked.
Stir it properly o that it is well mixed.
Now remove to a big vessel, add ample amout of hot water n all veggies to this..
Initially keep the flame high .
When the veggies start boiling, reduce the flame to low to medium.
Let the veggies are properly boiled.
When it is done, add chopped coriander leaves.
Now make the tadka.
Heat oil n ghee, and add all tadka ingredients to this.
When mustard seeds start crackle, add this to hot dalma.
Sprinkle cumin red chili powder over this.
Serve hot with rice…enjoy
Notes
You can add whatever veggie available in your kitchen.
If yaou are making for infants ,avoid green chili n tadka part…
And add more ghee ,just mash the boiled veggie and give to them.
Whatever veggie available in my home,I used that one.
Soak the dal for 30 min so that it is swollen in size and have more nutrients.
In this way it takes less time to cook and consumption of gas also less.
Here I have used masoor dal also as it is more healthy and you can t differentiate with tuar dal.
