Shakshouka
2 dollops of Anchor Butter
1 cup chopped yellow onion
1 red bell pepper, seeded and diced
¼ teaspoon sea salt, more to taste
Freshly ground black pepper
3 medium garlic cloves, minced
½ teaspoon smoked paprika
½ teaspoon ground cumin
Pinch of cayenne pepper, optional
1 28-ounce can crushed tomatoes
2 tablespoons harissa paste*, see note
1 cup fresh spinach, chopped
3 to 5 eggs
⅓ cup crumbled feta cheese
¼ cup fresh parsley leaves

Chilli Soy Mushrooms
50g Anchor butter
6 medium flat mushrooms
6 spring onions, chopped, plus extra to serve
A thumb-sized piece ginger, chopped
1 red chilli, finely chopped
3 tbsp soy sauce
a pinch caster sugar
150g basmati rice
2 tsp toasted sesame oil
