Made Chilaquiles for the first time with homemade salsa chile morita

    Salsa Recipe: 6-7 Roma tomatoes, 1 tomatillo, 1/2 a white onion and a few cloves of garlic browned in pan for a bit, then add 4 chiles moritas and enough water to hydrate the peppers. Once softened, use tongs to transfer stuff from pan into blender. Add some of the water from the pan as well. Add a spoonful of chicken base and a pinch of cumin to the blender, and blend it all up until smoothish. Than transfer to a sauce pan, add salt and pepper and epazote leaves if you have them, and cook down for a bit.

    That’s it! So good.

    Edit to add: I had extra salsa after plating the chilaquiles so I added a teaspoon of apple cider vinegar too help it keep in the fridge. Tasted even better over the next few days.
