Roasted multi-pepper salsa with mango and corn

    Recipe:

    3 tomatillos, roasted

    2 Anaheim peppers, roasted, peeled, and deseeded

    1 Habenero, roasted, with seeds

    1 Caribe, roasted, peeled, partially deseeded

    1 Fresno, roasted, peeled, deseeded

    3 romas, roasted

    Half an onion, roasted

    2 romas, raw

    3/4 mango, chopped

    1 ear corn, roasted

    About 1.5 cups cilantro, chopped

    Method:
    Roast all peppers, tomatillos, onion, tomato, and corn. Peel peppers except habenero- use whole. Pre-chop cilantro. Cut kernels off corn. Cut raw romas in half. Cut mango into cubes. Put all ingredients in food processor with salt except mango and corn. Pulse until almost ready, then add mango. Pulse a bit more, then add corn. Barely pulse to mix in/lightly chop corn. Finish with juice of a whole lime. Enjoy!!
