1/2 cup of boiling water, 5 Roma tomatoes, 1 tablespoon of vinegar, 5 chile de Arbol (toasted in a hot pan for a few minutes and then soaked in the water/vinegar mixture for 15 mins), 1 jalapeño, 1/3 of a white onion, 5 cloves of garlic, 4 small tomatillos (broiled in oven until slightly blackened), 1 cup packed rough chopped cilantro, 2 low sodium vegetable bouillon cubes (dissolve these in the hot water/vinegar mixture), big pinch of black pepper, big pinch sugar.
Blend everything to desired consistency
Was experimenting by adding veggie bouillon. Turned out good but intended it to be red.

You’d need to add a lot more red peppers to get it to be red. But still, there is nothing wrong with a yummy salsa, no matter the color.
I like to use chile de arbol and dried guajillo peppers to make my tomatillo salsas red. I also like spice, so I tend to load up my salsa with lots of chile de arbol. If you can get some large dried red peppers with little spice to help alter the color and add a bit of flavor, that’s what I recommend.
