    Hi the recipe is as follows
    3 dozen Roma’s halved
    2 red onions
    4 cloves garlic
    8 assorted hot peppers
    Tossed in olive oil and salt pepper, smoked in the pit boss for 3 hours at 225 with hickory
    Remove from smoker strip off skins from Roma’s
    Combine all into pot and added:
    1 cup cider vinegar
    1 bunch cilantro
    3/4 cup bernardins fiesta salsa seasoning
    1 can of crushed tomatoes
    Brought to a simmer for 20 min
    Used an emulsion blender to turn the salsa into a fine consistency
    Placed in jars and canned using a water bath.
