Tomato + Jalapeno + Arbol Salsa

    Pretty happy with this one:

    * • ⁠5 roma tomatoes
    * • ⁠1.5 jalapeños
    * • ⁠3 chile de arbol (seeds mostly removed)
    * • ⁠1/4 of a white onion (more or less)
    * • ⁠1 clove garlic (actually used those frozen minced “cubes” you can find, worked great)
    * • ⁠Small handful of cilantro
    * • ⁠About a lime’s worth of juice
    * • ⁠Pinch of Oregano
    * • ⁠Salt (about 2% by weight)

    I roasted 4 of the tomatoes and the jalapeños in the pizza oven on full blast. After good blistering occurred, I pulled all but 2 of the tomatoes out. Those stayed in another 5 minute or so.

    I diced the onion and uncooked tomato. The cooked tomatoes and jalapeños were chopped roughly, and then everything except the salt went into the blender. Blended on load speed until consistency was achieved. I weighed the salsa, started at 1% salt, and increased by 0.5% until I hit where I liked it.

    Really good balance of a bit more a cooked/paste flavor combined with fresh tomatoes.
