Salsa

First attempt at salsa and my regular rendition of homemade guacamole. Wife likes the salsa, I’m not so crazy about it. A bit bitter from over roasting the peppers for me. Great heat though.

    Salsa (all seeds/stems removed from peppers)
    • 28oz can of crushed tomatoes
    • 14.5oz can of fire roasted diced tomatoes
    • ~5 cloves of roasted garlic
    • 1 red onion
    • 1 bell pepper
    • 1 jalapeño
    • 2 Serrano peppers
    • ~2tbs of lime juice
    • cilantro
    • salt to taste
    • couple pinches of sugar

    Roasted peppers, onion, garlic on grill at 425* for about 10-15 min (should do no more than 10 min, due to me over-roasting). Combine ingredients into blender and blend until desired texture. Add additional cilantro/salt/sugar as desired.

    Guacamole
    • 3 avocados
    • 1 Roma tomato
    • 1/2 red onion
    • ~2tbs lime juice
    • cilantro
    • salt
    • chili powder
    • cumin
    • cayenne pepper
    —last 5 ingredients to taste—

    Looks good. For how long I’ve making salsa I’ve learn more of time that bitter comes from from burnt skin or from char. Keep making it!

    I find green bell peppers to be a little off flavored for salsa. When I want really mild pepper flavor I use de-seeded poblanos.
