Curtido, Curtido de Repollo, or Curtido Salvadoreño.

It’s “Salvadoran” and that thing is called “Curtido” goes well with everything!!

I lived in Salvador for 4 years & they used to serve that with pupusas. I haven’t found anything remotely close to what I remembered here in the US
It’s amazing on papusas but I’ll be damned if it’s not better in fried fish tacos.
Unpopular opinion but I may like the curtido more than the pupusa…and boy do I love pupusas
