  1. It’s not your typical red salsa. It’s almost orangish and has small seeds and flecks of red. I’ve had a very similar one at a small taco truck years ago, so I imagine it has to be regional.

    It looks a little like sweet chilli sauce 🤔 was it sweet or acidic?

  4. That one is my favorite at Palenque! It is the red hot salsa made with chili de árbol. To me it seems like it has tomatillos plus garlic, but not sure what else. It is especially good in their fideo!

    Nothing you get from a recipe here will replicate your local place’s hot sauce. There so many infinite variations from generic to maybe made in house. If you’re in a place where you even have to ask, it’s not homemade and comes straight out of a big ass gross container. You’re better off asking them what your favorite salsa is, they can tell you from the tub in came in.

    Definitely boiled tomatillo and Chile de árbol. As for garlic and onion could be boiled or raw, try different ratios!
