
I took 6 plum tomatoes (cut in half), a pint of grape tomatoes (poked a hole in each), 2 yellow onions (quartered), 4 jalapeños (I only seeded 2 but you know how spicy you like stuff) and half a head of garlic (peeled but kept cloves whole) put them on a wire rack and smoke it all for 2 hours at 275f on my pellet smoker. Once done I threw it in my blender with 2 bunches of cilantro, the juice of 2 limes and salt.
Really basic salsa taken to 11 by throwing the veggies on the smoker. If you have the time and tools I highly recommend.
