    Rough Recipe:

    15 oz. Can of fire roasted, diced tomatoes
    28 oz. Can of crushed tomatoes
    3/4 of large white onion
    6 Serrano peppers (seeded 3 of them)
    1/2 a bunch of cilantro (roughly 1/4 cup diced)
    6 cloves of garlic
    1/2 a lime juiced
    Salt and pepper to taste

    Broiled 1/2 the white onion (cut into half inch rounds), serranos, and garlic for several minutes until charred. Diced the remaining 1/4 of the onion and cilantro.

    Added all to blender and blended together. Adding lime juice and salt/pepper at the end.

    Turned out a bit spicier than I imagined but still delicious.

    I think canned tomatoes offer a nice consistency whereas fresh ones can make the salsa more watery.

    Supposedly canned tomatoes actually have a lot more lycopene so they’re actually healthier for you than using fresh tomatoes. My understanding is that the reason for this is that they are picked and canned immediately and that preserves the lycopene whereas the ones you buy whole at the store are picked and left to be shipped to you and all that.

    Another benefit of canned tomatoes is that they’re redder and more delicious because they don’t have to have that thick skin that you need for store-bought whole tomatoes.

    Edit: to respond to something you said elsewhere in the thread, canned tomatoes are basically fresher than fresh tomatoes.

    Honestly, if you don’t have your own tomato garden, canned is really your only good option.

    You just can’t make an excellent salsa from “fresh” tomatoes that have been sitting in transport/on a shelf for several days. Canned tomatoes are kept fresh and are harvested and canned *exactly* when they’re at the correct ripeness.

    Now, IMHO, no salsa will ever beat the same salsa made with garden-fresh tomatoes, but canned tomatoes are still better than store-bought whole tomatoes.

    Hint on canned tomatoes you want to avoid the cans with citric acid.

    That’s what that “canned” taste is. It’s not even more expensive without it.

    Just look on the label. Store brands almost always have it. Organic brands do have it too.

    I recently tried canned tomatoes for my salsa for the first time since I didn’t have any fresh – it was delicious! And lasted longer too.

    I use 4 Roma tomatoes (Roast them in the oven) and then a can of fire roasted tomatoes 😋
