Pretty much followed the recipe in the link below, except used a veggie broth instead of chicken broth since I don’t eat meat. I was happy with the taste but it’s not quite as dark as it should be. Wondering if a normal blender vs my immersion blender would make it darker? The charred flecks could be smaller and more disbursed imo. I roasted the hell out of the roma tomatoes but maybe I should have let them go even longer. Maybe I just need more tomatoes to broth. It was a teeny tiny bit thinner than it should have been but I’d think it wouldn’t affect the color that much.
OMG I so want to try this but don’t want to put any of my broiler pans thru the required charring 😂

An, Baja fresh closed down their locations in the Midwest like 15 years ago. I worked there in high school for a bit. I know it’s just a chain restaurant but man, that place started me on my food journey. The variety and home made feel of many of the plates was delightful. Plus I got half off so I ate my ass off.
