As a fan of beets from eastern European descent, I’m actually 100% behind this! I feel like that would be amazing with deep fried pierogi (with a minor flavour adjustment)

on a scale of good to ‘just a spoon full of dirt’, how strong to the beets taste? i would fear they over power the pico.
