Tried Duplicating TAQUERIA street sauce “Original Roja” and Salsa Verde. The only difference in the two recipes is that I used 1/3 ripe red tomatoes for the Roja, and switched out the red peppers for green peppers for the Salsa Verde, other than that both the same recipe but different tastes.

    How’d they compare? I feel like you’re missing heat on the green salsa, but they look great

    The Recipe:

    5 Lbs green tomatoes, 6 yellow onions, 3 jalapenos, 6 red bell peppers, 12 cloves garlic, 1 cup fresh cilantro, 1 cup lime juice, 1/2 cup white vinegar, 1 TBSP salt, 1/2 TBSP cumin, 1 TBSP oregano, 2 teaspoons black pepper, 1/4 teaspoon cayenne, 1 teaspoon sugar. Chop, slice and dice, cook to boil then simmer 3-4 hours. I then put in sterile jars and gave them a water bath at 90 degrees for 40 minutes….will stay fresh for 1 year.
