  1. Kinda freeform salsa I made with some tomatillos we needed to use up.

    11 tomatillos

    2.5 roma tomatoes

    1 red onion

    2 jalapenos

    1 poblano

    1 Anaheim

    1 bell pepper

    1 head of garlic

    2 unknown red peppers from our CSA that I tossed on after I took this photo

    Smoked at ~250f over charcoal and whiskey barrel wood chunks for about an hour and blended with lime juice and cilantro.

    Pork was rubbed with salt, pepper, cumin, dried orange zest, various chili flakes, sazon, MSG, and garlic. Smoked for about 10 hours.

    Pup is Frank and I’m pretty sure he saw god when I was cutting the pork (and yes, he got some).

    While it doesn’t really work for this subreddit, whenever I smoke a pork shoulder roast for tacos, we make [a cilantro lime cole slaw](https://www.garlicandzest.com/cilantro-lime-slaw-no-mayo/) for the tacos. The acidity of the slaw cuts through the heaviness of the smoked pork and gives a refreshing crispness. Give it a try, you won’t regret it.
    And it would still go great with a little salsa in the taco too.
