Tortilla’s how it should be! Greetings from Puerto Vallarta

After a visit at my friends house in the mountains I was determined! I wanted that station too in my house. The metal “bowl” is a part of the plow that sits behind a tractors to plow the field. The hole in the middle is filled up with a piece of metal. That has been welded. They use “cal” to make the metal non sticky. Cal is a chalk I think. It works fantastic! The ceramic base is an old barbecue up side down. I learned you need a flame banging again the metal in order to get the tortilla right. But man ! It’s so gooood!

That’s a huge Comal! Is the top metal, or clay? I didn’t realize you use cal (calcium hydroxide) on metal, i thought that was only for comal de barro (clay) .

This is very cool! I just made flour tortillas for the first time this weekend because the grocery store left them off my order and I didn’t want to drive back. I was surprised by how quick they came together. Probably a wash in how much effort it would have been to go back to the store.
