Best cut of meat for arroz poblano con carne

Any suggestions on which cut of pork to use? I was thinking pork butt, but I’m not sure if the cooking time is long enough to get it tender

    use anything from the shoulder, pork butt is the top part of the shoulder. the cook time should be fine for the tenderness, aside from the tenderloin all pork tends to have the same amount of tenderness
