
The habeneros(4) were smoked for around 90 minutes. The shallots(2) caramelized in about thirty. The peaches(2) only took at most ten minutes to grill. We added a pinch of coarse salt, fresh white pepper, cumin, chili powder, pinch of oregano, red wine vinegar, fresh lime juice, fresh cilantro, and the can of tomatoes shown, drained.
After tweaking the spices and acids, it went from pretty great to phenomenal. Six thumbs up.
