Picadillo
Ingredients:
3 medium Russet potato peeled and diced 1 pound ground meat 1 teaspoon kosher salt more to taste 1 teaspoon cumin 1/2 teaspoon pepper 6 clove garlic minced depend on you 1 tsp ground coriander
1 small white onion diced3 large Roma tomatoes roughly chopped1 to 2 serrano chiles roughly chopped 1 or 2 bay leafs
2 to 4 cups beef bone broth
1 teaspoon Mexican oregano
Directions :
1. Preheat 1/8 to 1/4 cup of olive oil in a nonstick pan to medium heat for a few minutes. Add the diced potatoes and cook until browned in most spots. Transfer potatoes to a plate lined with paper towels to drain, set aside.2. Add the ground beef to that same skillet and heat to medium/high. Season beef with 1 teaspoon kosher salt, 2 garlic cloves , 1 teaspoon cumin and 1/2 teaspoon pepper ,1 teaspoon of coriander Cook for 8 to 10 minutes until nicely browned.
3. Add the 4 garlic and onion, continue cooking for 2 to 3 minutes. Add tomatoes, serranos, 2 cup bone broth , salt and oregano to the blender and blend until smooth. Pour tomato mixture into picadillo. Let it come to a boil and taste for salt. Fold in the potatoes and stir until well combined. Taste for seasonings and continue cooking at a low simmer until sauce thickens and reduces, 7-10 minutes . Remove from heat.Enjoy !!
Notes: if want more liquidly add more broth. Add depth to flavor also roast the tomatoes and Serrano. If don’t use fresh tomatoes also use knorr tomatoes bouillon or paste.

Add 1/4 tsp turmeric, and minced ginger equivalent to the garlic, leave out the oregano, and you’ll have ground beef curry (Kheema curry).
It’s amazing how similar dishes pop up in very different traditions.

I just made empanadas with my leftover beef picadillo. Such a tasty comfort food.

YUM!! My mom used to make this for me all the time. My mom is too old now and I live far away. I’m going to get the instructions from her next time I visit. Thanks for posting. Looks so good, I can taste it. Really good with a flour tortilla.
