I left several out in the sun and they turned yellow somewhat. Are they still ok to use for salsa w/the others?
Also, is it best to store them at room temperature or in the fridge?

Looks good! I literally just harvested around 100 tomatillos from my garden. All from one plant! It’s a salsa/chili competition in 13 days so they will be in the refrigerator until then. I really hope they last haha

I just used some yellowing tomatillos in a salsa and they were fine! It wasn’t a salsa verse exactly, just a “what’s in my garden salsa” but the yellow tomatillos definitely didn’t hurt!

When I do my verde I’m usually harvesting into 5 gal buckets. I like to think the small under ripe green ones balance out the over ripe yellow ones with the general crop ready for harvest.
