Place tomatoes in sink with sink plugged Using a large stock pot, boil enough water to fill sink Pour boiling water over tomatoes to blanch them for 2-4 minutes, depending on size Run cold water over tomatoes to cool them down Peel and core tomatoes, then coursely chop and put into large pot Bring tomatoes to a boil, then reduce heat and simmer Add remaining ingredients to tomatoes Simmer mixture for 15-20 minutes Hot pack into sterilized jars Process for 30 minutes

I got this recipe from a friend in AZ.
5 lbs tomatoes
2 diced gr. Bell pepper
1 large red Onion chopped
4 Jalapeno diced
2 each of poblano and anaheim
1 head of garlic minced
1 bunch of chopped fresh cilantro
1 – 15oz can Tomato Paste
1– 4oz cans diced Gr. Chiles
1.5 Tbsp salt
1 Tbsp pepper
2 Tbsp dried oregano
