
Did a simple mesquite wood grilled salsa! A nice hot fire to get a blackened color. Blended it in batches. Onion, jalapeños and garlic with a couple of the tomatoes. Then added the last tomato with the cilantro and salt and blended more(food processor actually).
Recipe roughly as follows;
– 5-6 Roma tomatoes
– 4 Jalapeños(2 of which seeds removed)
– 4-5 garlic cloves
– 1 small tennis ball sized onion
– 8-10oz water
– 1-2 teaspoons coarse kosher salt
– Several sprigs/leaves of cilantro
Char everything on wood/coal fire. Add to blender/food processor and add salt and cilantro to taste and water to desired consistency.

Char everything on wood/coal fire. Add jalapeños, onion, garlic, water and half the tomatoes to a blender/food processor and blend. Then add remaining the tomatoes, salt and the cilantro and blend to your desired consistency. Blending things in batches and with adding water to get your desired consistency.
