
3/4 lb jalapeño, stems cut off but seeds left in
6 cloves garlic
1/2 cup water
1 tbsp chicken broth powder
1/4 cup vegetable oil
Salt to taste (about a teaspoon)
Add jalapeños, garlic, water and chicken broth powder into a small saucepan. Steam at medium heat, covered, for 15 minutes.
Transfer to blender. Add oil and salt to taste. Blend until smooth.
The oil gives the sauce its creaminess, which seems really strange to me but it absolutely works. 10/10, plus the ingredients are reasonably easy to acquire even in the UK.

Steam (with a steam basket) or simmer? This looks amazing and like the sauce at my local taqueria (I’m obsessed!).
More garlic than jalapeños 😳
In this case the garlic is providing the umph to emulsify water and oil. Like toum, aoli, mayonnaise without all those cloves you would have a salsa with oil on top

Oh oh! Try frying the jalapenos in the oil instead of steaming them (I learned this from the abuela at Tacodelli in Austin who makes the Doña salsa there)
