Been fucking with mustard lately and was inspired by LA taqueria Los Sabrosos al Horno to work mustard into a salsa.
Sautéed fresh chiles, yellow onion, and garlic in avocado oil with mustard seeds and coriander seeds. Blended with avocado, lime, lemon, salt, black pepper, Mexican oregano, and hot mustard powder. Served over homemade carnitas.
The mustard pungency and heat was nice with the pork, but I don’t think this would work too well with much else. Was tasty. Always good to try something new.

That does sound incredible for a pork dish and absolutely dreadful for anything else thank you for showing me that this exists

Interesting concept. It sounds like a great salsa for Hot Dogs
I think I would start with getting some bacon “grease” and adding the onions and peppers and saute. I would then add either Goldens Brown Mustard or French’s Yellow mustard and maybe some sugar to balance the mustard and bacon grease. I would blend with additional oil to hopefully emulsify it.
