    Recipe for salsa:

3 large tomatoes, roasted on grill wrapped in aluminum (toasted tomatoes taste so much more rich than those cooked in water). With a spoonful of oil inside the aluminum so they don’t stick. Toast on medium for approximately 16 minutes or until soft

2 cloves of garlic, toasted on grill

3 chiles de árbol (more or less to spicy liking) also toasted on grill

Put a few spoonfuls of water into the molcajete, grinding the garlic to a paste

Next grind the chilis into the molcajete, until it’s a paste.
Add the tomatoes and grind them up to your liking of texture for the salsa, more water if needed

    Salt to your liking

    Guacamole recipe:

    3 large avocados

Spoonful of the vinegar from the green chilis in vinegar

    Cilantro

    Half a Tomato, chopped

Lime juice (a whole one for smoothness)

    One finely chopped vinegar chili

    Combine everything

Keep avocado seed in for color

Looks great! But definitely no need to keep the pit in the guac, it ain’t doing nothing but getting in the way lol
