3 large tomatoes, roasted on grill wrapped in aluminum (toasted tomatoes taste so much more rich than those cooked in water). With a spoonful of oil inside the aluminum so they don’t stick. Toast on medium for approximately 16 minutes or until soft
2 cloves of garlic, toasted on grill
3 chiles de árbol (more or less to spicy liking) also toasted on grill
Put a few spoonfuls of water into the molcajete, grinding the garlic to a paste
Next grind the chilis into the molcajete, until it’s a paste. Add the tomatoes and grind them up to your liking of texture for the salsa, more water if needed
Salt to your liking
Guacamole recipe:
3 large avocados
Spoonful of the vinegar from the green chilis in vinegar
Cilantro
Half a Tomato, chopped
Lime juice (a whole one for smoothness)
One finely chopped vinegar chili
Combine everything
Keep avocado seed in for color
