The only Salsa I need on my Cochinita Pibil. Salsa yucateca Xnipek.
Just a finely sliced red onion with a lot of habanero, marinated with half lime and half white vinagre with a bit of oregano and salt. Traditionaly marinated with bitter orange.
My favorite salsa. Nice job! I do about 60/40 habanero onion ratio typically, but this looks fantastic! 👌
