Recipe: 4 Roma tomatoes, 1 sweet onion, 1 green pepper, 1/4 cup flat parsley, 1/4 cup mint, 1 tsp salt, 2 tbsp sumac, juice of one lemon, 1/4 cup olive oil, 3 garlic cloves. serve with feta. You can eat it with fried pita chips – I enjoy making a wrap with the fatoosh and hummus.

    Looks very nice and refreshing!
If I were a salsa snob, I would feel obligated to point out that Pita\laffa is the one ingredient that makes a fattoush salad, so you could call this a Lebanese inspired pico de gallo, while somewhere like Lebanon this would simply be known as veggie salad. Luckily I’m not like that though!

Fattoush means flat bread crisps—usually deep fried, but you can paint them in oil and bake them, or do them in the air fryer. This is an integral ingredient if you want to call a salad fattoush. Fattoush usually has more leafy stuff in it, too. What you have made is a Levantine Arabic style finely chopped salad. It goes by various regional names: salata na’amah, salata khadra mafroomah, (both mean finely chopped salad), salata falahiyyeh, salata baladi, (farmer salad or country/peasant salad) or just salata arabiyyah (Arabic salad). Whatever you made looks delish, though. Sahtein—to good health, as they say!
