This is a salsa my dad used to make. He did everything by hand I take some shortcuts.
A bag of coleslaw mix, chopped into smaller diced pieces.
Half an onion
The juice of 3 limes
4 pickled jalapeños including their juice
2 cloves of garlic
A bunch of cilantro
1 teaspoon of salt
Also, this makes an excellent relish on natural casing hot dogs/sausages. It’s super quick and easy🤷♂️

I forgot 1/2 cups of fresh carrot sticks and I use whatever carrots are in the can of pickled jalapeños as well.
This is just vinegar based coleslaw, not salsa.
