This reads like it was written by AI

My family never cooked with lard, so most of our Mexican dishes growing up were either vegetarian or vegan. I don’t understand how foreign the idea of vegan Mexican food is for some people. Dishes so flavorful that you don’t even have to add meat to any of them.

All these Americans think our food is unhealthy and full of grease have never actually had real Mexican food.

    > that will transport you to the streets of Mexico with every bite.

Wich streets? because those are filled with meat based foods, outside of
Roma in CDMX, have nevert seen vegan street vendors!

As a vegetarian nothing sounds more boring than vegan enchiladas. How do i make vegan chicharon torta or a pambazo

If that is true why has the book had NO sales so far. If you want an actual great vegan Mexico book check out Vegan Tacos or Vegan Mexico by Jason Wyrick. Both of them are available on Amazon and are amazing. On the other hand, Mexican food is super easy to veganize.

  7. My wife follows a Spanish YouTuber that does vegan food. Last week she made vegan “cheese” that was a pain in the ass to make, needed a bunch of finicky ingredients, and was less healthy than the actual cheese it was replacing.

Vegan food is certainly more interesting than vegetarian, no dairy and eggs mean you need to be more creative. But the idea that it’s healthy is more piety than fact. You never hear people on a regular human omnivorous diet having to obsess over whether they are getting enough of particular macronutrients.
