Throughout undergrad and grad school, I worked at taquerias. It was a great experience and I learned a TON about making salsas, tortilla, and how to make great meats for tacos, burritos, enchiladas, etc. Even though that time ended seven years ago, I never stopped loving making my own salsas, etc.
This is something I whipped up today for the tacos I’m making tonight.
* 4 Dried Guajillo * 2 Dried Chipotle * 1lb-ish Tomatillo * 4 Roma Tomato * 1 Vidalia * 4 Cloves Garlic * Juice 2 Lime * Salt to taste
Rehydrated the chilies then threw them on the stove to toast them for like 10 minutes. Threw the garlic cloves on the stove for 2 minutes. Reserve the rehydration water.
Tomatillo, Tomato, and Onion were broiled until charred. Heavy char on tomatillo, medium char on tomatoes, light char on onion.
Chucked it all into a food processor. Salted after processing. Use reserved rehydration water if you want add a bit to the salsa.
