    Cacahuatole:

    Made with toasted dried corn, anise, cinnamon, fava or broad beans, and sugar, from Tlaxcala

    ​

    Popo

    Made with cacao, dried corn, achiote, and Cinnamon, from Veracruz and Oaxaca

    ​

    Pozol

    Its principal ingredients are nixtamalized corn, cacao and cinnamon, from Tabasco and Chiapas (very popular in Yucatan in my experience)

    ​

    Tascalate

    Made with cooked dried corn, cacao, achiote, broad/fava beans, sugar and cinnamon, from Chiapas

    ​

    Tejate

    Prepared with nixtamalized corn, cacao, cacao flower, and mamey seed, from Oaxaca

    ​

    Chilate

    Made with cacao, cinnamon, rice and milk (people will also add Maria cookies to this when making it at home), from Guerrero

    ​

    Tejuino

    Made with a base of fermented corn and piloncillo

    ​

    These beverages reflect the biodiversity of the country, although they are made with a base of corn and cacao, their ingredients vary in each region

    Cebada (buckwheat drink) is missing big time. One of the best drinks available in the Sinaloa region. I miss it.

    I’d love to try Chilate but the recipes I see are missing the milk! Adding biscuits/cookies to it reminds me of certain types of chai (which have added biscuits too). Thanks for sharing!
