I added some captions to the photos but I know Reddit’s UI is terrible so here’s what’s going on.
3 jalapeños deseeded 1 serrano with seeds 2 large fresh from the vine heirloom tomatoes 1 red onion half a head of garlic
Smoked the peppers, onion, and garlic with a mix of mesquite and cherry wood for 90 minutes @ ~275 (I don’t have a proper smoker temp is approximate)
Hit the onion and the tomatoes with a blow torch for some extra roastiness without losing the raw sharpness of the maters
Toss everything in the food processor with some fresh squeezed lime juice, as much cilantro as you can pick until you get bored of picking cilantro, and some salt
And finally make sure to let it sit in the fridge overnight to marry! There’s some bubbles in the picture which are just air that got whipped in from the food processor, they’ll disappear as it rests.
