Yesterday I made a trip to the local Mexican grocery store for the first time because I needed mole paste for the tamales that are currently steaming on my stovetop. To say I went hard on buying shit is an understatement. $1.99/lb of Tomatillo? $2.50/lb on Seranno? $4 for a package of dehydrated Anaheims? I bought everything I could get my hands on. I do regret not buying nopales, though. Maybe next time.
I needed a sauce to serve with these mole tamales and whipped this bad boy up.
* 1.5-ish lbs of Tomatillo (IDK, I bought a bunch and just used them all) (Halved) * 6 Anaheims (Rehydrated, Stemmed & Seeded) * 3 Serrano (Stemmed & Seeded) * 1 White Onion (quartered) * 4 cloves garlic
Roast all of the above ingredients. I think I did 10-ish minutes on high broil.
Chuck them into a processor (or molcajete if you have one).
Add:
* Juice of one lime * 1/2tsp of EVOO * About 1/2 cup of cilantro.
