Made some lazy chicken in the instant pot yesterday with chipotles and lots of the same spices used in birria, and some beer -I had leftovers so I made taquitos and dipped them in the “consome.” I made some salsa with tomatillos and chiles de árbol. Lazy leftover meal came out pretty darn good.

That is the Mexican food cycle, today’s left overs are tomorrows tacos dorados, and leftover tacos dorados are the next day’s entomatadas
I can never get them to stay rolled. So I just stuff them like little quesadillas and fry them that way. How do you get them to stay rolled when frying?
I love the juxtaposition of how absolutely delicious and restaurant quality these look against the Dixie plate 😂
