* 15 lbs tomatoes * 2 large white onions * 1 head of garlic, minced * 3 bunches of cilantro * 8 serranos * 3 habaneros * 4 limes, juiced * Zest of 2 limes * 2 Tbsp white distilled vinegar * 2 Tbsp olive oil * Salt to taste
**Steps**
1. Dice tomatoes, salt and drain in colander for 20min 2. Dice onions. Chop cilantro, serranos, habaneros, cilantro, and garlic. Add all to the tomatoes. Mix well. 3. Juice in the limes, grate in the lime zest, add olive oil, white vinegar, and salt. 4. Mix well, best the next day.
Olive oil and vinegar might be a bit odd\controversial but I feel like it takes the salsa to the next level. Garlic isn’t traditional but I like it in there. I started zesting a couple limes to get a more pronounced lime note without adding too much acidity and its been good.
Is it true pico de gallo? I don’t know, but I know its good and I like it.

Me too! I enjoy it with Saltine Crackers because these crackers allow me to experience the fullness of the flavors without competing flavors of a chip. It’s the best ever!

This recipe looks amazing! The only thing I’ve never added is Vinegar and Habenaros, but I’m going to do this from now on! I enjoy adding Green Onion with Red Onion top! This is just heavenly!
Thank you so much for Sharing your recipe with us😊

Curious what the taste difference is with and without vinegar? Like, what does it really add to it?

Miss me with the oil and vinegar, the rest looks great though

How do you dice your tomatoes? I feel like that would take me hours just for the tomatoes because I’m so inefficient.

Looks amazing. How do you stop it from going bad? Even whilst in the fridge?
