***Salsa Verde***
20 Tomatillos
7-8 Jalapeños
6-7 Serranos
3-5 Habaneros
2 Poblanos
1-3 other chile Banana, Wax, Anaheim, etc.
1 Onion
2 bulbs Garlic
1 bunch Cilantro
2 Limes
2-3 tbs. Canola Oil
Salt
1) Removed husks and rinse tomatillos well, then cut in half
2) Slice jalapeños, serranos, poblanos, habaneros, other chiles, and onion (think fajita size)
3) Chop garlic
4) Mix well with oil and salt, coat evenly
5) Roast in preheated oven at 450F in a deep sheet pan or casserole dish (it will get soupy) and toss a few times to prevent over charring
6) Let cool and transfer to blender then pulse until chunky
7) Add chopped cilantro, fresh lime and pulse to desired texture
8)Salt to taste
9) Chill in fridge
