First attempt at making salsa. Roasted tomatillo chipotle


Pretty happy with the results. Third & fourth pic are a pollo asada marinade I thought would be appreciated here

    5 roasted tomatillos

    2 roasted garlic cloves

    Quarter of an onion, roasted

    1 roasted habanero

    7 chipotle peppers in adobo

    3 whole peeled san marzano tomatoes

    Blended ingredients above with immersion blender

    Handful of cilantro, 1 squeezed lemon, salt to taste

    Chicken marinade –

    1 Oz achiote paste

    1/4 cup olive oil

    3 minced garlic cloves

    simmer ingredients above on stove for 8 minutes

    add mixture to these ingredients below –

    1 tsp cumin

    1 tsp salt

    1 tsp pepper

    1 tsp mexican oregano

    1/4 cup squeezed orange juice

    1/4 cup squeezed lime juice

    blend everything together
