The crema looks a bit weird but I stirred it all together after the photo and it was amazing! I didn’t have fresh timatillos so I used most of a can of whole green tomatillos, 1/2 onion, 1 jalapeno, 3 garlic cloves, a fistful of cilantro and a little squeeze of lemon. The piquin chili oil is toasted piquin chiles and chile de arbol and a few garlic cloves cooked in olive oil over low heat until the garlic cloves turned brown and crispy. Strain it and you get a delicious spicy, toasty oil!

Edit: Damn y’all are tearing me apart for some experimentation. Oh well, it was spicy and delicious. Bring on the downvotes!
