
Earlier I posted asking what to do with a bunch of peppers and chilies my Mom got me ([https://i.redd.it/anwhsjeo9mdb1.jpg](https://i.redd.it/anwhsjeo9mdb1.jpg) is the picture of them all). Well as it turns out this wasn’t all of them. She had purchased the same verities for her self and never got to use them before she passed. Any way thanks for all the suggestions, I’m in the process of getting the ingredients together to make some of those dishes.
But since I have so many, I’m wondering about making some chili powder for a pot of beef chili. I would like to make a couple of kinds. One that is not any where near hot. Lots of flavour but no heat as my wife can’t handle it. I would make another for my self that is a bit hotter, but not burn your face off. I know that bag of New Mexico chilies are going to add a lot of spice.
Would it be possible to use a bunch of those New Mexico chilies to make like a tobasco sauce or something like that?
Thanks for all the ideas. I would really hate to waste them.

Roast them, gut and seed them, grind them fine. Add just enough oil to make a thick paste. Spread it on parchment and dry thoroughly in the oven. Grind again, I usually go one grind up from fine. Boom! Chili powder.
if you are going to make beef chili with it immediately you probably don’t need to grind it. I would toast, soak and the blend the dried chiles then add it to the dish and then let it cook for at least another 30 mins or more
