I literally just make a quesadilla, but throw the flower in there with the cheese as well. It doesn’t really need to be cooked all that much, just enough to wilt and get soft.
I wish this and huitlacoche were more common in restaurants. It’s a great vegetarian option.

I love this flower! It is so delicious even if it is not a quesadilla. Just tortilla with this as a guisado.
I usually chop onion, sautรฉ them with salt and pepper, add the flowers and some Serrano chopped..let it cook and serve with tortillas.
