Seems to have annoyed a few people. I don’t put beans or sauce on my tortillas as l don’t like the sloppiness. I toast the tortilla. Will limit my posts to traditional recipes to avoid bad feelings.

A veces en los hogares les damos nombres exclusivos a ciertas comidas, si yo a alguien le hablo de frijoles submarinos, nadie va a saber de que vergas hablo. Si en tu casa a eso le dicen enfrijolada, está bien, pero para el groso de la población, y me incluyo, eso no es una enfrijolada, de entrada se debería hacer con tortilla de maíz no trigo
These are definitely different to what I know as ‘Enfrijoladas’.
The ones we make at home (I live in Sonora, MX) are usually filled with chicken or cheese. We lightly fry corn tortillas and then dip them into the bean sauce (cooked pinto beans + bean broth + epazote, blend until smooth and fry in a bit of oil). Afterwards we add the filling and roll them. I usually eat 3 or 4 so I just snuggle them one next to each other on a plate and top with more bean sauce, sliced onion, lettuce, crema, and cheese. Some salsita of your choice on the side and you’re good.

Eso no son enfrijoladas, son frijoles con tortillas.
Las enfrijoladas son tortillas de maiz enrolladas, normalmente con pollo adentro o algun otro tipo de carne, y se les vierte los frijoles como si fuera una salsa.
