    ¡Qué rico!

    I almost did this for Mexican Independence Day, but opted for shrimp chiles rellenos instead.

    I like to go legit with walnuts and Sherry, but I didn’t have any of the ingredients for the sauce.

    I had one of these in Merida, Mexico and I thought I had died and gone to heaven. One of the best things I have ever eaten.
