Leave out the Chipotle and smoked paprika, use ancho chiles instead. Put some clove instead of coriander. Maybe less tomato

Only 4 dried chilies is an issue. Like the other poster said, anchos are a great addition. If I’m not using a bone in roast, I will add gelatin to the broth and that gives it a richer feel.

As a Mexican, as soon as I saw apple cider vinegar, canned tomato and tomato paste I was like… nope. Check out Mexico in My Kitchen instead. That woman is legit.
A double tortilla is a must, white onion, lemon and some green tomatoe sauce … And you’re there. Some people recommend fried onion to go with.

The best birria IMHO is made from borrego, not beef. But anyway, if there was something missing, my first suspicion would be a lack of salt! And when building the taco, be sure to have lots of freshly chopped cilantro, chopped onion, fresh lime and… Where are the salsas?

I also use chile de arbol and ancho. also cloves.
That’s weird recipe, a guy I know from 20 years plus and( his family is into the craft}, he would laugh his ass off reading that avocado oil line.
