What’s happening here?


First time making sauce with the peppers i’ve grown. One of the bottles look like this. Should i throw it away or just give it a shake and it’s fine?

    You will need to use xantham gum to prevent this. You can just shake it, it will be fine

  2. Add 1/8 tsp xantham gum when it’s in the blender. While the blender is running, or that shit will seize up in a second. It’ll help emulsify it and make it silky smooth.

    Xan/arabica/guar gum or purée your peppers less. It’s perfectly fine just extra liquid settling.

    You can also use agar agar, gelatin or other thickening agents but the gums are easiest and most consistent.

    It’s separating as blended liquids tend to do.
