








Three fillings:
Shredded beef
Yucatán Pork (cochinita pibil style)
Re-fried beans and cheese
Started with hot water soaking, then pureeing pasilla and guajillo dried chillies with garlic and onion, adding apple cider vinegar, clove and cumin seeds, mexican oregano, salt & beef stock. I used this to then pressure cook the beef, reserving a cup of this cooking liquor to add to the masa dough later. The rest I reduced down and then mixed through the beef once shredded.
Yucatán Pork: Shredded a mixture of shoulder and loin, cooked in the slow cooker with annatto, freshly squeezed grapefruit and oranges (can’t get bitter oranges here in the UK), garlic, allspice, cumin seeds, mexican oregano, dried epazote, salt.
Beans and cheese: I cheated and used La Sierra re-fried pinto beans.
I took note of the advice about the maseca needing flavour and much moisture, I mixed up 600ml of well seasoned chicken stock, with the beef cooking liquor to 250gram of maseca. I also added 1 teaspoon of baking powder and 1/2 teaspoon of bicarbonate soda.

Question for other people though: what causes that kind of masa breakage? My gut reaction is that it’s the wetness of the masa.
