    Cut the entire branch off with the peppers next time and put a damp paper towel on it to try to keep feeding the peppers. Once they are fully picked you might get color change but it’ll still taste green.

    If you still want to try just keep them in a warm dry spot and they might turn red in 2-5 days. Also check for mold to make sure it doesn’t spread to healthy peppers.

    Peppers don’t ripen off the plant. They just change colour which is not ripening.

    I string mine up, they may not get as sweet as they do on the plant but they will still turn and get a bit sweeter!

    Oh baby!! beautiful crop yield you got there. I would treat them like avocados. Place in a brown paper bag for a few days. Then ziplock and freeze and bring them out when necessary

    Ah yes, I just emptied my reaper and habanero plants today for the same reason. I lay mine out on a baking sheet and leave them near a sunny window for a day or two. I have nowhere near the volume you do, though.

    How sure were you it would freeze? Next time you risk the potential freeze. The pods will be fine if the plant dies anyway.

    They do ripen indoors, and they have a different taste after.

    Layer in a box in newspaper, one level at a time. Check weekly. Any with color will ripen on your counter or windowsill, so no reason to wrap in paper. I freeze really hot green ones. Source: I farmed chiles for 15 years. But u/CapsucumBaccatum is correct – they ripen much better attached to the plant (and hung upside down in your garage or barn). Rocotos are fabulous, btw!

    next year cut the whole bush down, and hang it ina warm place. they will ripen

    Cover them up with a towel (like bathroom towel) and put a few apples and bananas in with them. They’ll release ethylene and help ripen many up. I do this every year. I also try keeping in area cooler than room temp,clike garage or shed.
