This is a modified version of the salsa asada de aguacate recipe from the Asada cookbook by Bricia Lopez and Javier Cabral. Very highly recommend this cookbook – every recipe I’ve tried so far has come out delicious. Inspiring stuff.
14oz tomatillos + 8 serranos + 1 spring onion + 1-2 cloves garlic, all grilled over mesquite. Chopped the spring onion and roughly blended everything with 2 avocados, a squeeze of lime, and cilantro/oregano/salt/pepper/MSG to taste.
Served here over fresh flour tortillas with mesquite-grilled flanken beef ribs and longaniza. Simple but perfect.

Some fresh chopped cilantro would take this thing intto the sttratosphere. Looks greatt though.

oh man, that salsa sounds amazing! i’ve never tried grilling the tomatillos and serranos, but i bet it adds a great smoky flavor. i usually skip the oregano too, but maybe i’ll give it another shot. thanks for sharing the recipe!

oh wow, that sounds amazing. i’ve never tried oregano in my salsa but now i’m curious. do you think the oregano adds a lot of flavor? i usually stick to cilantro, cumin, and a bit of msg. underrated spice for sure.
