
Ingredients: Half a white onion diced
A handful of parsley chopped
1 1/2 serrano peppers diced
1 lime juiced
1/2 a large heirloom tomato diced
2 ripe avocados
salt to taste
restaurant style tortilla chips
Save half of the diced onion, parsley, and tomatoes to mix in at the end with a spoon,
smoosh the chopped serrano, and the other half of the onion, parsley, tomato into a paste in a molcajete or bowl (or food processor but mortar preferred)

so I just got a molcajete and finished seasoning it, and really wanted to make something in it, and settled on guac since it’s pretty easy.
Basically grind up the serrano with half of the chopped white onion, cilantro, and tomato into a course paste, smoosh the 2 ripe avocados as smooth or chunky as you prefer, squeeze in a lime, mix in the other half of the chopped cilantro, onion, tomatoes with a spoon, and salt to taste.
A+ guac… Get a real knife, especially for those tomatos

Looks pretty good! Next time roast the jalapeños and peel the skin off first. Makes a smoother product
I know you’re used to using a small tool in bed but you don’t have to do it to make guac 😆
